Oatmeal Raisin Cookies

These soft and chewy oatmeal raisin cookies are a classic. Full of cinnamon spice and packed with raisins, these cookies will remind you of home.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 Tbsp pure maple syrup
  • 2 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp all spice
  • 1/4 tsp salt
  • 1 1/2 cups rolled old-fashioned oats
  • 1 cup raisins, golden or regular or both
  • 1 oz white chocolate, melted (optional)

Instructions

  • Cream butter until light and fluffy, about 1 minute.
  • Add in brown sugar and white sugar. Beat until light and fluffy, about 1 minute.
  • Add in the egg. Beat until combined.. Add in maple syrup and vanilla extract. Beat until combined.
  • In a separate bowl, sift together flour, baking soda, cinnamon, all spice, and salt. Add in oats.
  • Slowly mix dry ingredients into wet ingredients. Stir until combined.
  • Add in raisins. Stir.
  • Chill for at least 30 minutes.
  • Once dough is chilled, preheat oven to 350. Grease two cookie sheets.
  • Form dough into 1-1/2 Tbsp balls, spacing them about 2 inches apart on the cookie sheet.
  • Bake for 10-12 minutes.
  • Once cooled, drizzle melted white chocolate (optional)
