Maple Oatmeal Apple Pie - This sweet Maple Oatmeal Apple Pie is half apple pie, half maple oatmeal pie, combing two classic flavors to make one sweet, gooey, and amazing pie! This pie begins a homemade crust, has a layer of homemade apple pie, and finally a layer of maple oatmeal pie, making it the perfect dessert!

Ingredients

Crust

  • 9 " or 10" homemade pie crust or pre-made pie dough

Apple Pie Filling

  • 4 large apples, peeled and sliced (1/4" slices)
  • 3 Tbsp granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 2 Tbsp all-purpose flour

Maple Oatmeal Pie Filling

  • 4 Tbsp butter, melted
  • 6 Tbsp maple syrup
  • 1/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1 large egg
  • 1/4 cup milk, I used 2%
  • 1 tsp vanilla extract
  • 1/2 cup coconut, sweetened and shredded
  • 1/2 cup old-fashioned oats
  • 2 Tbsp all-purpose flour

Instructions

  • Preheat oven to 350 degrees.
  • Roll out your pie dough and place in a 9" pie plate (I used a 9" deep dish plate). Set aside.
  • In a large bowl, combine sliced apples, granulated sugar, cinnamon, ginger, and flour. Set aside.
  • In a separate bowl, mix together melted butter, maple syrup, granulated sugar, dark brown sugar, egg, milk, vanilla extract, coconut, oats, and flour.
  • Add your apple pie filling first, then pour the maple oatmeal filling over the top.
  • Bake for 65-75 minutes, until the filling is slightly golden brown and set (jiggles just slightly when the pie is given a little shake). If the crust seems to be browning quicker than the pie is cooking, you can cover the crust with a pie shield or some foil.
  • Allow the pie to cool at least 2 hours so the filling can set.
  • Serve at room temperature or cold, and top with whipped cream or ice cream, if desired.
  • Store leftovers in the fridge.
