These Chocolate Chip Oatmeal Pancakes are an easy yet elegant breakfast idea. The addition of oatmeal adds a nice texture to the pancakes while the chocolate gives it a sweet twist.

Ingredients

Pancakes

  • 1 1/4 cup all purpose flour
  • 1/2 cup quick oats
  • 2 Tbsp brown sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 1/4 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips (I used semi-sweet, but milk would work too)

Toppings

  • Syrup, Cinnamon Whipped Cream, or Powdered Sugar

Instructions

  • Preheat a pan or griddle over medium heat, greasing with cooking spray.
  • In a bowl, mix together flour, oats, baking powder, brown sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, mix milk, oil, egg, and vanilla extract.
  • Add wet ingredients into the dry. Stir until just combined (it's okay if there are small lumps). Add in chocolate chips and stir a couple of times.
  • Pour pancake mix on the hot griddle, and cook until edges look dry and bubbles appear (and pop) on the surface, about 2-3 minutes. With a spatula, peek to see if the cooking side looks golden brown. If it is, it's ready to turn. Cook on the other side for 1-2 minutes.
  • Enjoy!
