If there’s one commercialized holiday I can get behind, it’s one that’s colored in all things pink and red.
Guys, I’m just a sucker for those Valentine’s Day decorations all of the stores assault you with at the front of the store.
Heart shaped napkins? Pink and white sprinkles? Cupcake liners with L-O-V-E scrawled all over the sides? Check, check and…check.
I don’t even have a reason to purchase all of these things…

Well, at least I used some of the hundreds of sprinkles I bought in these strawberries and cream sandwich cookies. Progress, guys. I’m making progress.
Cake mix cookies are a blessing and a curse. The blessing is that they’re so easy, and that they taste amazing. The curse is that they’re so easy, and that they taste amazing.
Funfetti Cake Mix cookies used to be a staple in my household–that is, until I tried Strawberry Cake Mix Cookies.
They’re soooo soft and chewy, and have this unmistakeable strawberry flavor that is truly enhanced by the marshmallow cream cheese frosting.
While I can’t deny I love homemade everything, cake mix is such a handy pantry staple to have on hand. I’ve used it for these Strawberries and Cream Cupcakes, and I’ve used it for these Apple Spice Whoopie Pies.
Definitely keep a box or two on hand!

Strawberry Sandwich Cookie Ingredients:
- strawberry cake mix
- eggs
- butter
Marshmallow Cream Cheese Frosting:
- marshmallow creme (aka, marshmallow fluff)
- cream cheese

How to Make Strawberries and Cream Sandwich Cookies:
- First things first, you need strawberry cake mix to make the base of this recipe: strawberry cake mix cookies. The cake mix, eggs and butter are all mixed together to make the festive pink strawberry cookies.
- Then, you fill the cookies with my favorite strawberry dip–marshmallow fluff mixed with cream cheese.
- You have a couple options here. I don’t offer these in the recipe, but I’m offering you some ideas here (you’re welcome 😉). I rolled with cookies in sprinkles, but you can also roll them in crushed freeze dried strawberries.
- Or, you can sprinkle the freeze dried strawberries on top of the filling. Or you can add a dollop of strawberry jam on top of the frosting. Feel free to get creative!

Strawberries and Cream Sandwich Cookies are filled with a sweet marshmallow cream cheese frosting! These easy strawberry cake mix cookies are only 3 ingredients, and the homemade frosting is only 2 ingredients! Plus, a step-by-step video below!
- 1 box strawberry cake mix
- 2 eggs
- 6 Tbsp butter, melted
- 8 oz cream cheese, softened to room temperature
- 7 oz marshmallow fluff
- sprinkles, optional
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- In a large bowl, mix together strawberry cake mix, eggs, and melted butter until combined (batter will be thick).
- Using a 1" cookie scoop, shape dough into balls and place on cookie sheet, about 2" apart. The batter will make 24 cookies.
- Bake for 9-10 minutes, or until cookies are set. Allow cookies to cool, about 10 minutes.
- Mix cream cheese and marshmallow fluff until well combined.
- Spoon frosting into a piping bag or plastic bag, and pipe the frosting onto 12 of the cookies. Add sprinkles, and top with remaining cookies.
- Enjoy!
- If there are any leftovers, I would suggest refrigerating the cookie sandwiches because of the cream cheese filling.
