Happy Valentine’s Day! The day (and month!) of L-O-V-E (and pie–definitely pie).
I’ve always had a soft spot for Valentine’s Day. There is something so special about showing others how much you care for them, and Valentine’s Day is a great reminder to reach out to loved ones and send them a sweet note or offer a kind word.
How can you not love a day full of pink and red hearts, love notes (regardless of whether they’re friendly or romantic in nature), and amazing desserts? Seriously, what’s not to love? 😉
In fact, even though I’ve spent many a Valentine’s Day single, it’s one of my favorite holidays. Single or not, it’s a great excuse to show friends and family (and maybe even a stranger or two?) how much you care in a fun way–like, with pie, perhaps?? If I found a pie and a note from a friend on my front porch, it would definitely be the highlight of the day, week, and probably month.
I mean, honestly, how can you not love a day that warrants a slice (or two–I’m not here to judge 😉 ) of sweet, creamy Strawberries and Cream Citrus Pie?
When I was younger, my parents used to make Valentine’s Day pretty special. While my brother, sister, and I would spend the day at school swapping valentines and eating candy, my mom was decking our house out in festive red and pink decor. After our red and pink themed meal, we would eat dessert and read the letters my parents wrote telling us how much they loved and cared for us three.
Strawberries were always a big part of the meal, because not only did we all love (I’m definitely going to run that into the ground today 😉 ) them, they’re SO festive! We’d dip them in this amazing marshmallow cream dip that I could literally eat by the spoon. It’s straight dangerous.
So, obviously, the way to go for today’s dessert was a Strawberries and Cream Pie with a citrusy twist. Guys, this one is a winner for sure!
Since 1989, Tampico Beverages has been manufacturing amazing juice drink concentrates! They have tons of different juice flavors (Citrus Punch is a favorite, and the one used in today’s recipe) that not only taste fantastic on their own, but also are great ingredients. Sweet and savory alike, Tampico Beverages are an incredible addition to any recipe.
In this Strawberries and Cream Citrus Pie, I used Tampico’s Citrus Punch in the shortbread crust, whipped cream, and in the citrus cream filling. It adds a bit of sweetness, a little tang, and complements the strawberry flavor perfectly.
The pie of your Valentine’s dreams.
- 2 cups all purpose flour
- 1 cup butter, sliced and softened to room temperature
- 2/3 cup powdered sugar
- 2 Tbsp Tampico Citrus Punch
- 2 cups heavy whipping cream
- 2 Tbsp Tampico Citrus Punch
- ½ cup powdered sugar
- 1 Tbsp lemon zest
- 2 8oz packages cream cheese, softened to room temperature
- 3/4 cup powdered sugar
- 1 Tbsp Tampico Citrus Punch
- 1 ½ cups strawberries, sliced
- 1 Tbsp lemon zest
- Strawberries, sliced or whole
- Preheat oven to 350 degrees.
- In a food processor, blend flour, butter, powdered sugar, and Tampico Citrus Punch until the dough forms a ball. Press the dough into a 10” pie plate in an even layer. With a fork, poke holes in the dough (this will help let some of the air escape from the crust while it’s baking). Bake for 10-12 minutes, or until lightly golden brown. With a rubber spatula, press the crust down lightly (it will have puffed up slightly while baking). Allow to cool.
- With a mixer, whip heavy whipping cream until it begins to thicken, forming soft peaks. Add in powdered sugar, lemon zest, and Tampico Citrus Punch. Whip until it forms stiff peaks. Set aside.
- In a separate bowl, beat cream cheese until light and fluffy. Add in powdered sugar, lemon zest and Tampico Citrus Punch. Fold 2 cups of whipped cream into the cream cheese mixture (reserve the rest of the whipped cream for the topping).
- Spread sliced strawberries in an even layer on the bottom of the shortbread crust. Spread citrus cream filling over the top of the strawberries. Spread the remaining whipped cream over the filling. Top with strawberries.
- Refrigerate for at least 2 hours.
- Enjoy!

I’m not really into Valentine’s Day, though I do love everything pink and red and hearts! And I’m all about the desserts. What a pretty pie, Michelle! I’ve never had a citrus cream filling before! Sounds perfect for today!

love that there’s juice in all the layers! i tend to not like creamy pies because they seem one notedly creamy. but since this one has strawberries and flaky shortbread crust, it sounds like there’s plenty of textures to keep me interested (:
