These easy appetizers take only 4-ingredients, but leave a lasting impression! Spinach, strawberries, and feta cheese sit on top of TRISCUIT Cracked Pepper & Olive Crackers!
There was a time in my life when I believed fruit had no business being paired with anything but other sweet foods (other fruits, desserts, breakfast, etc.).
I still remember one Christmas when my aunt, who always–always–brought a cheesy sausage and egg casserole for brunch, surprised all of us with a spinach and mandarin orange salad.
Ohhhh, indeed. What a surprise it was, and definitely kind of a let down, especially taking into account it was during the period of my life mentioned above. I wasn’t too much of a picky eater when I was younger, but I drew the line at citrus and spinach.
And yet, here we are with this recipe, so clearly, somewhere along the way, I turned a corner. You know, saw the light. Shifted gears, if you will.
And now, I’m a wee bit obsessed with fruity and savory things, especially when they sit on top of a TRISCUIT.
I really miss the old days of Food Network. Don’t get me wrong, I love me some Trisha, Ree, and Damaris, but, I miss the days of straight cooking shows. I don’t mind a competition show every now and again, but really, when am I ever going to be in a situation where I’m given random ingredients and a time frame to create something edible? Probably never.
One of my favorite shows from way back when, was “Easy Entertaining with Michael Chiarello.” His show was one of the first cooking shows I ever watched, and the way he made entertaining seem so effortless caught my attention. He could take something simple and turn it into something seemingly fancy and elegant, making cooking and baking seem a little less intimidating.
This appetizer recipe truly is simple. Three ingredients, (spinach, strawberries, and feta cheese) are placed on top of a TRISCUIT Cracked Pepper & Olive Cracker to make a fancy-ish appetizer that is ready in under 10 minutes.
I’ve been a fan of TRISCUIT Cracked Pepper & Olive Crackers ever since I first saw them available in stores; however, this recipe would definitely pair well with TRISCUIT Mediterranean Olive Crackers, or, any of these other TRISCUIT Cracker varieties:
- TRISCUIT Original Crackers
- TRISCUIT Reduced Fat Crackers
- TRISCUIT Hint of Salt Crackers
- TRISCUIT Smoked Gouda Crackers
- TRISCUIT Sriracha Crackers
Fun, simple, and elegant. Michael Chiarello taught me well.
- 20 TRISCUIT Cracked Pepper & Olive Crackers
- 5 strawberries quartered (20 pieces in all)
- 20 pieces of spinach
- 1/4 cup feta cheese
- Balsamic dressing optional
- Layer all 20 TRISCUIT Cracked Pepper & Olive Crackers with a piece of spinach and a strawberry quarter.
- Crumble feta cheese over each cracker.
- Drizzle with balsamic dressing, if desired.
- Enjoy!

I used to never think that sweet and savory foods could mix, either! The combination was just so strange to me, but luckily, I grew out of that! These appetizers look SO good, Michelle! I love strawberry spinach salads, so the idea of the topping on a triscuit sounds like the perfect, poppable treat!
