So, it’s mid-September, and I’m just now delivering to you the hallowed pumpkin. I know absence makes the heart grow fonder and all that, but in reality, the main reason why I’ve neglected pumpkin until now is because September has been b-u-s-y with a capital B, and I haven’t had much opportunity to get into the kitchen.
However, after realizing it was going to be September 20th (only 2 days away from fall) and the blog was seriously lacking in the pumpkin department, I made it a priority to get pumpkin on here ASAP. Aren’t you proud of my life goals?? Because I am.
And this easy pumpkin pie smoothie bowl could not be a better choice (totally patting myself on the back for this one 😉). Making breakfast a party one smoothie bowl at a time.
Smoothie bowls are my latest obsession. For something so pretty, smoothie bowls are probably one of the easiest things to whip up for breakfast.
I’ve probably mentioned this before (in fact, I’m almost positive I have–it was a real shining moment in my career as a student), but in college in my public communications class, I did a persuasive speech on the importance of eating breakfast every morning (and then passed out bags of cereal so that no one would have an excuse to skip breakfast the next morning).
Even though all I was really hoping for was an A with that topic, the truth is, I do believe that breakfast is the most important meal of the day. For the brain and body to stay energized throughout the day, it is necessary to have a well-balanced breakfast. - 2/3 cup almond milk
- 1/3 cup pumpkin puree
- 1/4 cup ice
- 1 banana
- 3 Tbsp Greek Yogurt Vanilla, Plain, or Pumpkin
- 1 tsp pumpkin pie spice
- 1 Tbsp maple syrup
- 3 Tbsp Carnation Breakfast Essentials® Powder French Vanilla (Chocolate might give a great flavor as well!)
- Coconut
- Pecans
- Almonds
- Dried Cranberries Raisins, Cherries, etc.
- Sunflower Seeds
- Honey
- Maple Syrup
- In a high-powered blender, pour in almond milk, pumpkin puree, banana, Greek Yogurt, maple syrup, pumpkin pie spice, ice, and Carnation Breakfast Essentials® Powder.
- Blend on high, until mix is smooth.
- Pour into a large bowl.
- Top with coconut, pecans, almonds, dried cranberries, raisins, dried cherries, or sunflower seeds. If desired, top with honey or extra maple syrup.
- Serve immediately.
- Enjoy!
