I’m having a moment…with cheesecake, that is (and I was apparently having a moment with cinnamon at the time I photographed these, considering the pile of cinnamon up there in that one area).
Back when I was a young and naive, and the hardest part of my day was deciding between my jellies or high tops, I didn’t fully appreciate pumpkin in all of its glory. I enjoyed pumpkin pie just fine, but I was more than all right with having one slice at Thanksgiving and calling it a day for the year.
What in the world was I thinking?
I don’t exactly remember when I realized pumpkin could be in other recipes, like pumpkin bread, pumpkin scones, or pumpkin cookies, but ever since that discovery, I’ve been making up for lost time by adding pumpkin to all the things.
Like…drum roll please…
Cheesecake. The dessert of all desserts.
Pumpkin cheesecake is my newest obsession. There’s something about the combination of tangy cream cheese with the comforting flavor of pumpkin that creates this amazingly rich yet light dessert. In this particular dessert, pumpkin cheesecake is paired with a pecan crust instead of the traditional graham cracker crust typically paired with cheesecake.
While I’ve always had a thing for graham cracker crusts, I’m pretty certain that this pecan crust, made out of toasted pecans with a sprinkling of sea salt, is one of the best things in this entire universe. Toasted pecans (because it brings out their flavor and adds some extra crunch!) = pure comfort food (and also me eating them by the handful).
