Lucky Charms Sugar Cookie Truffles Recipe

This Lucky Charms Sugar Cookie Truffles Recipe is made with only 5 ingredients! These cream cheese truffles are not only made with lucky charms cereal, but each sugar cookie truffle is stuffed with extra marshmallows! An easy and festive St. Patrick’s Day dessert!

 Easy Lucky Charms Truffles

Homemade truffles are made with only a handful of ingredients, like store bought cookies and cream cheese, and these white chocolate truffles come together easily and make such an adorable treat for St. Patrick’s Day!

Between the crunchy sugar cookies, lucky charms marshmallows, and cream cheese, these have such a unique flavor that tastes somewhere between a buttery sugar cookie and chewy lucky charms cookies all wrapped up in a white chocolate coating. Plus, there is the surprise marshmallow stuffed inside of the truffle sugar cookie balls, which makes these just the perfect treat! It’s almost like a secret ingredient and I love it.

Ingredients:

You only need a few simple ingredients to make these creamy chocolate truffles with cream cheese! 

  • Crunchy Sugar Cookies: I like to use store-bought sugar cookies for sugar cookie truffles, because they are nice and crunchy, which pairs so well with the cream cheese. I typically use Pepperidge Farms Sugar Cookies.
  • Lucky Charms Cereal: You will need both the cereal and extra marshmallows, as the cereal gets mixed into the truffle cookie dough and extra marshmallows gets stuffed inside each cream cheese cookie truffle.
  • Cream Cheese: You want to use brick style cream cheese and full fat cream cheese (it’ll make for a really delicious truffle).
  • Vanilla Extract
  • White Chocolate: You can use white chocolate bars, white candy melts, or vanilla almond bark. If possible, avoid using white chocolate chips because they don’t melt as well (they often have additives that white chocolate bars don’t have and those additives can make the chips difficult to melt smoothly).
  • Green Food Dye: If desired, you can use green food dye to drizzle over the top of each truffle.

How To Make These Sugar Cookie Truffles With Lucky Charms Marshmallows:

  • Food Processor: Pulse your sugar cookies and lucky charms cereal pieces in a food processor until they are fine crumbs. Set aside 1 Tbsp of cookie crumbs, if desired. 
  • Cream Cheese: Add in the softened cream cheese and pulse until well combined (softened to room temperature).
  • Vanilla Extract: Add in the vanilla extract and mix until combined. 
  • Marshmallows: Using a cookie scoop or your hands, scoop the truffle mixture into small cookie dough balls. In the palm of your hand, flatten the truffle cookie dough ball and place a lucky charms marshmallow in the center. Then form the truffle dough around the marshmallow and roll into a symmetrical ball.
  • Freeze: Place the sugar cookie balls onto a large baking sheet lined with parchment paper and freeze for about 20-30 minutes. 
  • White Chocolate: Melt white chocolate (or melt almond bark or candy melts) in the microwave or with a double boiler. Using a fork, dip each lucky charms truffle in the melted white chocolate. Once covered, tap the fork gently against the sides of the bowl to remove any excess chocolate and then place back onto the parchment lined sheet to set. 
    • Pro Tip: Use a toothpick or metal cake tester to help you gently push the sugar cookie truffles off of the fork and onto the lined baking sheet.
  • Decor: If desired, once each truffle has been covered in white chocolate, dye the remaining white chocolate with green food dye. Pour it into a small plastic bag (like a ziplock bag) or piping bag and drizzle a little chocolate over the tops of each truffle. 
  • Cookie Crumbs: Sprinkle with the reserved crumbs before the chocolate sets. You can also top with green sprinkles, if desired!

Alternatively, if you do not have a food processor, you can place cookies and cereal in a sealed bag and use a rolling pin to crush into fine crumbs. Then you can use an electric hand mixer to mix the cereal sugar cookie crumbs and cream together (you can also place the crumbs in the bowl of a stand mixer and use your paddle attachment to mix the cream cheese into the crumbs).

Storage Tips:

Because these are cream cheese truffles, you will want to store these in an airtight container in the fridge or freezer. I like them both ways! 

Cookie Substitutions:

If you don’t want to use store bought sugar cookies (or can’t find them at the grocery store), you can use 

  • Homemade: You can definitely make these sugar cookie truffles with homemade cookie dough. If you are using a homemade sugar cookie recipe, make sure they are a few days old and a little bit on the dry side. This will help them have the right texture in these truffles. A soft sugar cookie will make the truffles too soft. I love this Chewy Sugar Cookies recipe!
  • Butter Cookies: If you can’t find crunchy sugar cookies at the store, you can substitute with shortbread cookies or butter cookies!
  • Oreos: You can also use golden oreos!
  • Vanilla Wafers: Finally, you can also use vanilla wafers! They would make a perfect substitute. 
  • Cereal Substitutions: You can also skip using lucky charms cereal and simply use more cookies. Just pick out the rainbow marshmallows to stuff in the center of each truffle! Or, you can change things up and swap the cereal for another type.

Final Baking Tips & Tricks: 

  • Cookies: If you can’t find crunchy sugar cookies (like Pepperidge Farm sugar cookies), you can use golden oreos, shortbread, butter cookies, vanilla wafers, or homemade sugar cookies.
  • Lucky Charms: You’ll need 1 cup of lucky charms cereal (the actual cereal + marshmallows–when pulsed into fine crumbs it’ll act like a cereal flour) plus more marshmallows for stuffing inside each truffle.
  • White Chocolate: Make sure you use a white chocolate bar or vanilla almond bark as white chocolate chips will not melt as easily. 
  • Food Processor: Don’t have a food processor? No problem! Use a rolling pin and an electric mixer to make the truffles!
  • Freezer: I actually love these lucky charms sugar cookie truffles frozen! It takes these cookie truffles next level.

Ingredients
 

  • 1 cup lucky charms*
  • 20 sugar cookies**
  • 5 oz cream cheese, softened to room temperature
  • 1 tsp vanilla extract
  • 2 cups white chocolate, candy melts, or vanilla almond bark***
  • 20 lucky charms marshmallows
  • green food dye, optional

Instructions
 

  • In a food processor, pulse together sugar cookies and lucky charms cereal.**** Remove 1 Tbsp of sugar cookie crumbs to use for decorating.
  • Once they are fine crumbs, add in the cream cheese and pulse until combined.
  • Add in vanilla extract and mix until well combined.
  • Line a large cookie sheet with parchment paper. Using a cookie scoop (or your hands) scoop out small balls of the sugar cookie truffles (about 1 Tbsp in size).
  • Flatten the dough in your hand and place a lucky charms marshmallow in the center. Then, fold the dough around the marshmallow and roll into a ball.
  • Place each truffle on the cookie sheet. Freeze for 20-30 minutes.
  • In the microwave (or in a double boiler), melt almond bark, candy melts, or white chocolate in a microwave safe bowl in 15-second increments, stirring after each hit in the microwave.
  • Dip each cookie truffle into the chocolate with a fork. Once covered, gently tap the fork on the edge of the bowl to remove any excess chocolate.
  • Using a toothpick or metal cake tester, gently push the truffle off of the fork and onto the baking sheet to set.
  • If desired, dye any remaining almond bark or white chocolate with green food coloring. Pour into a piping bag (or ziplock bag) and drizzle over each truffle.
  • Sprinkle the reserved cookie crumbs on top.
  • Refrigerate before serving, and store leftovers in the fridge or freezer.

*Lucky Charms: You use 1 cup of cereal (including marshmallows) + additional marshmallows for stuffing inside of each truffle.
**Sugar Cookies: I use store bought crunchy sugar cookies (like Pepperidge Farm cookies), but you can use homemade sugar cookies (that are a few days old), or substitute with golden oreos or vanilla wafers.
***Candy melts and almond bark melt a little easier than white chocolate, but you can cover the truffles however you prefer.
****Finally, if you do not have a food processor, you can put the cookies and cereal in a ziplock bag and crush with a rolling pin. Then you can use a stand mixer or electric mixer to mix the cream cheese into the cookie crumbs.
