All right guys, I’m taking a break from all things pumpkin and apple and instead going the route of a flavor that knows no seasons:
Chocolate.
It’s good in every season, right??
Plus, I’m sure there are some of you that are already so over the pumpkin spice and all that, so guys, this one’s for you! (And me, because chocolate is my jam. I mean, have you seen this Oreo Chocolate Cream Pie?! Clearly I’m a slight chocoholic.)
Chocolate White Chocolate Macadamia Nut Cookies. I’ll take the whole stack and any leftover crumbs.
These Chocolate White Chocolate Macadamia Nut Cookies might just be the best thing ever, because they combine two of my absolute favorite cookies: Double Chocolate Chip Cookies (because chocolate cookie dough) and White Chocolate Macadamia Nut Cookies (salty macadamia nuts are everythingggg).
Because choosing a favorite cookie feels like choosing a favorite child, I opted to combine the two best cookie recipes ever into one amazing cookie that’s so good it has chocolate twice in the title.
The title might be a little repetitive with the whole chocolate on chocolate thing, but I really wanted to drive the point home, ya know?
Chocolate on chocolate, guys. Is there anything better??
For me, the best kind of cookies or cookie bars are the ones that are chewy and a little fudgy (or a lot fudgy, in the case of these S’mores Double Chocolate Chip Cookie Bars and these Marshmallow Oreo Chocolate Chip Cookie Bars) with crispy exteriors.
Of course, these cookies are all that and more (as if you didn’t see that coming). The more part comes from the macadamia nuts, because the added saltiness brings out the flavor of chocolate.
(On a side note, did you ever see that Modern Fam episode where Manny tells Gloria that salt brings out the flavor of chocolate milk? It might all be in my head, but chocolate milk totally tastes better with a pinch of salt.)
Anyway, back to the nuts, I used dry roasted and sea salted macadamia nuts. I know macadamia nuts can be a bit expensive, but you don’t actually need that many for this recipe. 😊
Let’s talk about these Chocolate White Chocolate Macadamia Nut Cookies and what makes them, in my opinion, the best cookies of all time!
- These cookies use more brown sugar than white sugar, which is what helps make them chewy.
- The granulated sugar helps give these cookies a crispy edge.
- I used a combination of white chocolate chips and semi-sweet chocolate chips, but you could easily use only white chocolate chips if you prefer.
- And, the best part of this whole recipe, it’s a no-chill cookie dough!

- 1/2 cup unsalted butter, softened
- 2/3 cup brown sugar
- 1/3 cup white sugar
- 1 egg
- 1 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp espresso powder, optional; espresso powder brings out the flavor of chocolate without adding any coffee flavor
- 1 cup + 2 Tbsp all purpose flour
- 1/3 cup dark chocolate cocoa powder, regular unsweetened cocoa powder is fine as well
- 1/2 cup roasted and salted macadamia nuts, roughly chopped
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
- In a large bowl, beat butter (with a hand mixer or standing mixer) until light and fluffy. Add in brown sugar and granulated, beating the mixture until well combined.
Next, add in egg and the vanilla extract. Beat until combined.
- Add in salt, espresso powder, and baking soda; mix until combined.
- In a separate bowl, mix flour and cocoa powder together. Slowly incorporate the dry ingredients into the wet ingredients, mixing until combined.
- Add in macadamia nuts, white chocolate chips and semi-sweet chocolate chips. Mix until combined.
- With a medium cookie scoop (about 2 Tbsp of dough per cookie), scoop the dough and spread evenly on the cookie sheets, about 2 inches apart.
- Bake for 15-16 minutes, or until cookies are done.

These are scrumptious to the max! But you really need to add a DOUBLE recipe as well as the single. If I a going to make them there need to be LOTS of them!
