{Thick and Chewy} Triple Chocolate Chip Cookies: These triple chocolate cookies will melt your heart. Perfectly chewy and incredibly thick, these just might be the perfect chocolate chip cookie!
As a kid, Saturdays were a thing of glory. Of course we loved them because it meant sleeping in, hours of backyard shenanigans, pancakes, and an occasional soccer game or two, but, the kicker for Saturdays was the Saturday Box.
Oh. The Saturday Box.
The Saturday Box was a parenting tool my mom and dad used to teach my siblings and me to put away our things. During the week, if my parents found any of our toys, shoes, clothing, etc. left out instead of put away in the closet or wherever their rightful place was, they would commandeer it and put it in a box. And those items stayed in that box until Saturday.
We learned pretty quickly that if we wanted our things we had better put them away where they belonged. Genius parenting technique, if I do say so myself. A couple of days without my pink jellies was all I needed to remember they belonged in the closet instead of strewn across my bedroom floor.
While getting my favorite barbies (and shoes) back made Saturday the highlight of my week when I was six, now-a-days, all a Saturday needs to rank top-notch is to simply show up.
Cookies help too. Cookies help everything become top-notch. It doesn’t take much in life to make me happy.
These triple chocolate chip cookies are ridiculously thick and chewy, which is just how I like my cookies. A good crispy cookie can be fine every now and again, but nothing outshines a thick cookie packed with chocolate chips.
Not even Girl Scout cookies. Also, on a side note, Girl Scouts, can you please stop changing the names of your cookies? Because by the time I finally get a new name figured out, you’ve changed it again. I just can’t keep up anymore.
That half of cookie was devoured in like 10 seconds flat after snapping this photo. Seriously, sometimes the hardest part of photographing food is having to wait ’til the shot is finished before eating it all, especially when cookies are involved.
Cookies are straight up my weakness. My self-control, will power, and manners pretty much go out the window. It’s not my most flattering character quality, but I suppose there could be worse things.
Please make yourself a batch of cookies. Cookie calories don’t count on the weekends.

{Thick and Chewy} Triple Chocolate Chip Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1 1/3 cups all purpose flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 1/4 tsp espresso powder, optional
- 1/3 cup semi-sweet chocolate chips
- 1/3 cup milk chocolate chips
- 1/3 cup white chocolate chips
Instructions
- Beat butter until light and fluffy, about 1-2 minutes. Add in brown sugar and white sugar and beat until combined. Add in egg, vanilla extract, and salt. Mix.
- In a separate bowl, mix flour, cornstarch, baking soda, and espresso powder. Slowly incorporate the dry ingredients into the wet ingredients.
- Once combined, add in the chocolate chips and mix.
- Chill the dough for 20-30 minutes, just to firm it up slightly. (Because I'm impatient, I typically scoop the dough onto trays and pop them into the freezer for about 5 minutes instead).
- Preheat the oven to 350 degrees and grease a cookie sheet.
- With a medium cookie scoop (about 2 Tbsp of dough per cookie), scoop the dough and spread evenly on the cookie sheets, about 2 inches apart.
- Bake for 14-15 minutes, or until the cookies are slightly golden brown.
- Enjoy

Can you freeze the uncooked cookie dough?
Hi Emma! Yes, you can freeze it. I usually scoop the dough into balls, store them on parchment paper in an airtight storage container, and then freeze them. When you want to bake them, you can either let them defrost, or you can bake them frozen (I add about 3-4 extra minutes on the bake time if I’m cooking them from frozen). Thanks!
I make my own version of triple chip cookies but I use milk, semi-sweet, and peanut butter chips in mine.
